Rainbow Cakes! tiny to GIGANTO-sized cupcakes!

October 25th Sunday. My first try with many things for this baking session! for the very first time, i baked a Lemon Pound Cake. its got cream cheese in it! First try with my new Giant Cupcake Pan! Also first time creating a very colourful Rainbow Cake! thus creating for the very first time - A very colourful Rainbow Giant Cupcake! with the remaining batter, i made the regular-sized cuppies and 3 tiny ones!

it was mad rush in the morning, as i was baking for my hubby who started driving back from KL! its suppose to be a surprise but he surprised me by setting off so early from KL! so no pics taken before getting to this colourful stage! i am very particular about getting the right tone in the colours... yes there are 7 colours in the rainbow and i have 8 in the pic! i like the tiffany blue i created and i kept it and created the right sky blue, thus there are total 8 coloured batter!


using the giant cupcake pan set my heart throbbing fast! from the moment i was done filling up the pan, i began to worry! would it fill up to the top, will it erupt, will it be cooked? will it taste good? will it fail???? i kept my fingers crossed! after 40mins in the oven, i open it up to test.... nope it wasn't ready, the middle and bottom was still wet... then another 20mins past, its been an hour, its still wet... and the top began to brown... another 20mins... the eruption started to break the smooth surface!!! and its still not cooked!!! it got me really worried!!! will it fail??? can't remember in the end how long it took to bake the cake but the cake was a little dry.... then come the worry, whether the cake would turn out nicely! and so glad it did! all the details came out nice! the colour did turn out great for the top of the cupcake that i didnt need to frost it! very lucky as i didnt have time to make my favourite creamcheese frosting!

made with love especially for daddy, my dear hubby! the cake was alittle dry but i love the smell of the fresh zested lemon in the cake... pipped alittle mashmellow creme to go with the cake. it was a long slice of cake and i love the colours in the giant cupcake with the green and purple missing as i leveled the cake, removing the erupted part! i started with too little red and didnt dare to add too much batter at first thus so much orange for the base and i made a booboo by adding orange first as the last colour in the Rainbow song is blue...


after the long wait for the giant cupcake, the regular-sized cuppies baked in the oven beautifully! love the colourful surface! but i didnt have time to wait for it to bake and left it to M to look after them. the top cracked alittle as i think it was baked alittle too long in the oven! in comparison, the cuppies tasted softer in texture. love the colourful marbled effect on the cupcake case! everyone was different as i just spoon the batter in and let it flow anyway. love the residue colours on the wrapper!
mum say she liked the firm texture yet crumbly in the mouth! glad she liked it! i still have lemons in my fridge as i forgot to bring them over to mums and bought new ingredients for this bake... next i will still bake lemony cupcakes but a different recipe! want to try out something that i always been wanting to do... hope i can find some time!
with pink and red batter left, i filled 3 tiny cupcake holders in different ways to see the effect. One all red, one all pink and one marbled pink and red. the tiny marbled cuppie turn out the nicest and these bite-sized cuppies as like sweet treats! think they made beautiful Valentines' day cuppies!

baby r's October milestones!

Rachel my dear little darling is growing! she is developing her motor skills very well.... making her so cute and pipi at the same time! with grandparents in the house with me the whole week (19th-24th Oct), i was able to take more pics of her, documenting her growth and her actions.


eating her hand more than ever! she know who she can get away with when she wants to devour her fist! yes devour! she would lick her tiny fist, suck on the fingers and splash it all over her face and sometimes gag herself silly when she suck too hard on her hand! fil stops her from time to time, reminding her gently not to do it... i would be stern about it and i even got her to sit with me at a "naughty" corner for gog crazy with her hands! em... so she got away and got carried away with the only other person in the house.... my mil. she doesnt even say a thing about it and thus rachel was very happy thru the week as she can experiment with her fist anyway she wants it till she gets caught by me! came to a point that i couldnt stand her smelly fist that i took 2 bibs and wrapped it around each fist and turning her into a "boxer"! she usually can get the cloths i used to wrap her fist off easily but i wanted to really get her to stop so this was made more difficult. love her "angry" face then she gave me a "help me" look and i did melt and loosen it alittle for her to be able to take off after so many tries ... cos she never gave up and she wins!




she is now very good at holding on to her pacifier! she take it out and most of the time, she can put it back in ... thats if she wants too! if not she would hold it and when she tot you are not looking at her... she flips it over her head or throws it to the sides! very pipi! of cos till now she still spits out her pacifier and the distance the pacifier lands is pretty far!



her hair grew first. the 3rd day onwards, her hair grew and the progress is fast! she prob takes on both mum and dad. our hair grows pretty fast! love her head! so round and smooth! i am adoring this stage of her hair as it short but at a length that gives me goosebumps! yes daddy is still complaining and hoping her hair didnt grow so fast as she looks very good to daddy when her hair was all off!



little rach wants to controll everything! last month, she started holding onto our hands when she drinks her milk.... moving our hands around and pulling our fingers that grasp the bottle away and yes we have flying bottles in the house! she loves pulling the bottle in and out of her mouth and if you try to stop her.... she will just simply insist not drinking!!! ergh... but yet simply adorable..... yah contradictions. as she is getting heavier... carrying her on one hand for too long is pretty tough... so glad she now knows how to hold her empty bottle and she hangs on to it, not letting it fall as i carry her to put the bottle away at the sink or when she dun finish her milk, we walk to the kitchen to put the bottle into hot water to keep warm... she simply finds it fun! so far, she is so determine to get to the destination without any booboos, she haven't drop any bottles yet!




feeding herself is what she want to achieve next but no, i haven got her started on that! not yet as she plays with her bottle and she will prob make a mess as she allows the milk to flow all over! but i have given her time with her bottle when there is very little milk left in the bottle. she loves it! sometimes in the night, i have been feeding here while she is lying on the bed as she simply dun want to be carried! amazing... she dun get choke but after a few times, i still carry her up as i like to feel her warmth as i feed her in the cold air-conditioned room.



my little gal in her daddy's cap! YES! its a cap from the 1978! hee ... opps it tells you how old is R's daddy! from the packing, many treasures were found, one of it was daddy's cap! once dried from the washing, we got little R to put it on and yes she is definitely gx's gal! splitting image of daddy! she can sit up for a few minutes with the help of the cushions to support her!


Little Rachel prob loves Cinderalla's fairytale and adores MJ! she constantly takes out one of her mittens and loses one side of her socks! we would have to always back track our journey around the house or worse when we are outside on the streets! she is beginning to rub the plastic part of the pacifier on her gums... wonder if she is starting to teeth... she is definitely gaining weight thou she is on soy milk! getting rounder!


all is well with our little one. think she is progressing well, except that she fell ill with her tummy and till now she still can't take cow's milk! everytime i try in the mid of the week, she either have wet stools again and she even threw up just this week when i gave her cows milk... so we are still on soy milk. she now laughs when we tease her... loves to play... can forego her naps just to be with people! she now talks more and seems like she even know how to sing! definitely she sure knows how to ask for what she ones and rejects the milkbottle loudly when she had enough! we have been dancing everyday, a new routine we started just a week before daddy's bdae. she loves it and i enjoy the moment. hope to have it recorded in image one day and soon before she have enough of it with me, and looking for new experiences...
